What Is Mississippi Pot Roast?

Mississippi Pot Roast is a twist on classic braised pot roast. It is a slow cooked beef dish that is made with packets of ranch dressing and au jus gravy, along with a jar of pepperoncini peppers. The result is a tangy, flavorful meat with savory gravy that goes perfectly with mashed potatoes. Our version is also keto-friendly!

According to Southern Living, this recipe came about when Ripley, Mississippi resident Robin Chapman tried adapting her aunt’s pot roast recipe for her kids. The original recipe was too spicy for their tastes, so Robin added a packet of ranch dressing to cut the spice. They loved the result, so Robin passed the recipe on to friends. Eventually it ended up in a church cookbook, and from there its fame spread. Before long, it became known as Mississippi Pot Roast and was an internet sensation.

Do I Have to Use a Crock Pot?

No!

Crock pots are definitely easier, but this pot roast can also be made on the stovetop or in the oven.

To cook on the stovetop, follow the recipe preparation instructions as directed below, using a heavy-bottomed Dutch oven instead of a slow cooker. Add about 1/3 cup water to the bottom of the pot. Place the lid on the pot and simmer over low heat for 2-3 hours, turning the roast every half hour or so. You may need to add more water to the pot if it begins to dry out. The meat is ready when the meat falls apart.

To cook in the oven, preheat the oven to 275 F. Again, follow the recipe preparation instructions as directed below. Use a Dutch oven with a tightly fitting lid instead of the slow cooker. Add 1/3 cup of water to the bottom of the pot, then replace the lid. Braise in the oven for 3 to 4 hours, turning it over after 2 hours. The roast is done when the meat falls apart easily. Add more water if the water evaporates. Shred meat to serve as directed below.

Do You Have Any Tips or Tricks?

Absolutely!

  • If your meat is frozen, you don’t have to thaw it before putting it into the crock pot. It may just need a little extra time to cook from its frozen form.
  • Sear the roast on all sides before placing in slow cooker to lock in juices and flavor.
  • Experiment with different types of gravy. Try using mushroom gravy or brown gravy instead of au jus.
  • Don’t lift the lid to peek during cooking time. Each time the lid is lifted, heat is lost and it takes extra time for the pot to warm up again.
  • Do you like your food spicy? Try using a jar of giardiniera peppers instead of pepperoncinis.
