Most of us try to make healthy choices in our lives. We try to exercise, drink enough water, and eat foods that won’t make the doctor cringe. But if you’re like me, every now and again I get in the mood for a big ole messy burger!
By big, I mean BIG! These burgers are a half-pound of ground sirloin, stuffed full of yummy, crispy bacon, and sauce. You’ll need two hands to hold these bad boys … unless you’re not quite so brave and use a knife and fork instead.
But whether you’re a hands-on, all-in burger-eater or an expert at cutting and fork-eating with surgical precision, you’ll remember this meal long after you’ve enjoyed it.

I am a huge fan of bacon in any capacity, and I especially love it with burgers. When I make these, I stuff my burger with bacon AND I lay some thick slices on top, too. I mean, there’s no such thing as too much bacon, is there?

More Options for Burger Stuffings
Sometimes each person in our family makes their own personalized stuffed burger. I make the meat mixture and shape it into patties, then I call the fam in so they can stuff their own. I lay out a ton of different ingredients, then they do the work. It’s always fun for everyone to come up with their own combinations, and it was especially fun when my kids were little!
To keep everyone’s burgers straight, we each write our name on a sheet of waxed paper and keep the burger on it after its done. When it’s time to grill, I lay them on the rack in ABC order. That way there aren’t any surprises when we take our first bites.
One of our favorite stuffings is bacon, caramelized onions, and cheddar cheese. If you like hot and spicy burgers, try cheddar, jalapenos and salsa. My personal favorite combination is Swiss cheese with sauteed mushrooms and onions.
Experiment and have fun! These burgers could become a tradition in your house!
Directions
- First, fry the bacon and onions together until the bacon is browned and crispy. Remove and place on a paper towel to drain. Cover with another paper towel and press down gently to remove excess grease from the surface.
- Place the degreased bacon and onion in a small bowl. Add the bbq sauce; mix well. Set aside.
- Prepare the meat. Mix the ground sirloin and the dry onion soup mix by hand in a large bowl until the soup mix is well-incorporated.
- You’ll need two patties for each stuffed burger – one for the bottom and one for the top. Divide the meat into eight patties that are about the same size and thickness.
Choose four patties to be the bottoms of the burgers. Shape each into a “nest” shape. This will serve as a cup for the filling. - Divide the filling among the four bottom patties, filling each little nest.
- Top each filled patty with a flat patty. Pinch the edges to seal, then smooth them to make sure that there are no openings.
- Grill over medium heat for about 8 – 10 minutes per side. It may take longer if your burgers are a little extra chubby.
- At the very end of the grilling time, add a slice of cheese to each burger. We like using provolone, but cheddar also works well with the zesy bbq bacon stuffing. Or let your burgers go naked … it’s up to you!
- These burgers are best served on Kaiser rolls with lettuce, tomato, and plenty of napkins!

8 strips of bacon, chopped
1/2 cup chopped onion
1/2 cup bbq sauce
2 lbs ground sirloin
1 envelope dry onion soup mix
4 slices cheese (optional)
Directions
- Fry bacon and onions together until bacon is browned and crispy. Use a slotted spoon to remove bacon and onions to paper towel to drain. Blot to remove excess grease.
- Place degreased bacon and onion in a small bowl. Add bbq sauce mix well. Set aside.
- Prepare the meat. In a large bowl, use your hands to mix the ground sirloin and dry onion soup mix.
- Divide meat into eight equally-sized patties. Shape four patties into a “nest” shape to serve as a cup for the filling.
- Scoop bbq filling into each “nest.” Top each filled patty with an unfilled one. Pinch edges to seal, then smooth to ensure there are no small openings.
- Grill over medium heat for about 8 – 10 minutes per side. Top with cheese in last minute of grilling; allow to melt.
- Serve on Kaiser rolls with lettuce, tomato, and onion.
