How Long Will This Salad Stay Fresh?
I do not like to make this salad ahead of time. Since cucumbers contain so much water, their texture changes over time once they’re peeled, sliced, and mixed with other foods. I enjoy the crunch that a fresh cucumber gives, especially in this salad.
I recommend that the salad is made no more than a few hours before serving. It will keep for a few days if stored in a tightly sealed container in the refrigerator, but keep in mind that the crunchiness of the cucumbers will diminish as time passes.

Ingredients
1 medium to large cucumber
2 green onions, chopped
1 clove garlic, minced
2 tablespoons chopped fresh dill OR 2 teaspoons dried dill
1 teaspoon lemon juice
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup sour cream
Directions
- Peel and slice the cucumber, then cut each slice into quarters.
- Combine cucumbers, green onions, garlic, dill, garlic salt, and pepper in a medium-sized bowl.
- Add sour cream and lemon juice. Stir until well combined. Garnish with additional dill, if desired.
