What is Creamy Dill Cucumber Salad?

This summertime salad is made with fresh cucumbers, green onions, dill, and sour cream. It is a cold salad that goes well with any classic bbq favorites like burgers, chicken, steak, or salmon. Plus, it is a great way to use the cucumbers from your garden!

This creamy cucumber salad differs from the traditional in that it uses a cream-based dressing rather than a vinaigrette. It is a nice alternative to the acidic vinegar-based cucumber dishes that are commonplace at barbeques and potlucks.

Cucumbers have tons of health benefits. They’re low in calories but high in nutrients and they’re also a great source of hydration and antioxidants. So the more you eat, the better off you’ll be!

Not only is this cucumber recipe easy, but it's also perfect for those on keto diets.

What Makes It Keto Friendly?

All the ingredients in this dish are great foods to eat on a keto diet. This type of eating is based in high fats, very low carbs, and no sugar. Keto is mostly known for the weight loss benefits it provides, but there are other perks to following this eating style, too.

I have personally noticed a decrease in ankle swelling as well as a decrease in the frequency and severity of migraine headaches as a result of adopting a keto diet. And I’ve enjoyed the weight loss benefits too, having gone down three pants sizes over the course of about 6 months!

The biggest drawback to keto is the huge change in eating habits that must be made. A lot of my summer favorites, like potato salad and spaghetti salad, are too high in carbs to eat while doing keto. I don’t mind so much, because for me the benefits outweigh the hassle of changing the way I eat. But all the same, when I discover a quick and easy, keto-friendly summer side dish, I jump on it!

This salad can be ready to serve in just ten minutes!

How Long Will This Salad Stay Fresh?

I do not like to make this salad ahead of time. Since cucumbers contain so much water, their texture changes over time once they’re peeled, sliced, and mixed with other foods. I enjoy the crunch that a fresh cucumber gives, especially in this salad.

I recommend that the salad is made no more than a few hours before serving. It will keep for a few days if stored in a tightly sealed container in the refrigerator, but keep in mind that the crunchiness of the cucumbers will diminish as time passes.
