In the autumn, pumpkin pie spice can be found in practically any supermarket near other spices and seasonings. But over time I’ve discovered that not all spices are created equally. As with meats and wine, choosing high quality spices drastically affects the quality of the finished product, even if it’s just pancakes.

  • Lightly oil skillet. Preheat skillet until drops of water sizzle. Using a ladle, drop pancake batter onto a lightly oiled surface. Cook over medium heat until bubbles appear on the surface, about 3-5 minutes.Cook until bubbles form on the surface of the pancake.
  • Flip pancakes and cook about 1 minute, until underside is golden. Serve hot.Flip and cook 1 minute until done.
