What Are Pumpkin Spice Pancakes?
Pancakes are an American and Canadian breakfast favorite, notably served with butter and maple syrup for a filling and sweet start to the mornings. They are made from simple ingredients, such as flour, eggs, salt, and milk. Some pancake recipes include sugar, vanilla, or other ingredients.
Pumpkin spice pancakes are a seasonal variety of these very basic breakfast pancakes. Vanilla extract is replaced with pumpkin pie extract, a portion of milk is replaced with pumpkin puree, and pumpkin pie seasoning adds the pumpkin spice that so many people love in the fall.
Can I Use Fresh Pumpkin?

If you are using canned pumpkin puree, it is important to use canned pumpkin, not canned pumpkin pie filling. Canned pumpkin is unseasoned, and since we are using extract and a seasoning blend, we want to start with a blank flavor canvas.
Where Can I Get Pumpkin Pie Spice?
In the autumn, pumpkin pie spice can be found in practically any supermarket near other spices and seasonings. But over time I’ve discovered that not all spices are created equally. As with meats and wine, choosing high quality spices drastically affects the quality of the finished product, even if it’s just pancakes.
I have been gradually transitioning my spice cabinet to The Spice House spices. I have found that they have a greater depth of flavor than other brands. - In a large bowl, whip together egg whites with 1/4 cup sugar. Combine other ingredients and fold into egg whites.
- Lightly oil skillet. Preheat skillet until drops of water sizzle. Using a ladle, drop pancake batter onto a lightly oiled surface. Cook over medium heat until bubbles appear on the surface, about 3-5 minutes.
- Flip pancakes and cook about 1 minute, until underside is golden. Serve hot.

1/2 cup pumpkin puree
3 tablespoons melted butter
2 teaspoons baking powder
1 teaspoon salt
