What is Addictive Asparagus?

Addictive Asparagus is a make-ahead finger food appetizer that is served hot. It combines simple ingredients to create a delicious (and addictive) party snack. But don’t be afraid of the asparagus! The vegetable flavor isn’t strong, and most people don’t recognize it as asparagus.

People have been eating asparagus since ancient Egyptian days, and it’s so celebrated in Germany that June 24 has been declared as Spargelzeit, or Asparagus Season. It’s an extremely versatile vegetable that can be sauteed, grilled, steamed, roasted, or eaten raw. But in this recipe, we use canned asparagus since it is softer and milder in flavor.

Can These Be Made Ahead?

Yes!

The asparagus rolls must be frozen for a time as part of the preparation. That point of freezing is the perfect place to pause in your prep. After the rolls have frozen for 10 – 12 hours, remove them from the cookie sheet and place them in a Ziploc freezer bag or other airtight freezer storage container, then replace them in the freezer.

When you’re ready to bake them, remove the spears from the freezer and let them sit at room temperature for about 20 minutes, until they are soft enough to cut. Then proceed with the rest of the recipe as directed.

It’s best to use your prepped and frozen addictive asparagus within about 6 months.

Can I Skip Freezing Them?

No.

Freezing the bread-wrapped asparagus helps the rolls stay together. The moisture within the food freezes, and when it is thawed it changes the texture of the food. In these appetizers, that textural change is needed to produce the final product as it was intended. The bread, cheese, and asparagus meld together to create a delicious new flavor profile.

Directions

  • Cut crusts off bread and flatten slices with a rolling pin. Set aside.Roll each slice until it is flattened.
  • Combine bleu cheese, cream cheese, and egg in a small bowl. Combine the egg, cream cheese and bleu cheese in a small bowl.
  • Spread a dollop of the mixture evenly over a slice of bread.Spread the cheese mixture on each slice.
  • Place one spear of asparagus at the edge of each slice. Roll up, securing with toothpicks if necessary.Roll the spear to the other end, securing with toothpicks if necessary.
  • Place rolled spears on a baking sheet. Cover with foil and freeze overnight. Place on a baking sheet, cover with foil, and freeze overnight.
  • The next day, remove the spears from the freezer and partially thaw, about 30 minutes. Remove toothpicks, if used. Cut each roll into thirds.Slice each roll into thirds.
  • Preheat oven to 375 F.

  • 8 ounces cream cheese

  • 1 egg, beaten

  • 1 -15 ounce can asparagus spears, drained

  • 1 cup butter, melted

  • 1 -8 ounce container grated Parmesan cheese

Notes

  • If you’re making these ahead, place rolls in a Ziploc freezer bag after the initial 12 hour freezing time on the baking sheet. Freeze in the Ziploc bag for up to 6 months. When ready to bake, follow directions from step 5.
