When I was a kid, I liked most vegetables. I ate green beans, broccoli, cauliflower, and even spinach. But the one vegetable that I wouldn’t touch with a ten fool pole was carrots. I really hated them, to the point that I would gag when I relented and tried one. Sitting around my grandmother’s dinner table, my aunts tried to entice me to eat them.

“They’ll give you curly hair! Wouldn’t you love curly hair?”

“They’ll make your eyesight strong. You’ll never need glasses if you eat carrots!”

But, no. Not even the most fervent urging could make me choke down that vile orange vegetable.

Then one day, my grandma made these carrots to go alongside her meatloaf, which I loved. But before she let me have a second slice of meat, she asked me to eat my carrots. I remember eying them suspiciously and weighing how much I wanted that second slice of meatloaf. My carnivorous nature won out. I took a forkful with my other hand on a glass of milk, ready to chase the nasty taste with a swig. But I was surprised to discover that I didn’t need it.

Once I grew up and moved out on my own, I forgot about these carrots. But after my grandmother passed away, I found this recipe in one of her binders. I was surprised at how fast and easy they were to make. And when I made them for my family, they loved them just as much as I did. Directions

  • Peel carrots and cut into slices.
  • Place carrots in saucepan. Add water until carrots are just covered.
  • Bring water to a simmer. Cook carrots until crisp-tender, about 6 minutes. Drain.
  • Meanwhile, melt butter. Add maple syrup and ginger. Cook on stovetop for one minute or in microwave for 30 seconds.
  • Pour syrup mixture over carrots. Stir and serve.

  1. I’ve made maple glazed carrots before (with vegan butter because we don’t eat dairy) but I’ve never added ginger. That’s a good idea! Yum!
