2 tablespoons butter
8 oz sliced fresh mushrooms
1/4 cup finely chopped onions
2 tablespoons flour
2 cups vegetable broth
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/8 teaspoon pepper
Directions
- Melt butter in a large pot. Sauté mushrooms and onions in butter until soft but not browned, about 5 minutes.
- Add flour and stir to make a roux that clings to the vegetables.
- Add broth slowly, about 1/2 cup at a time, whisking to incorporate flour after each addition.
- Cook, stirring occasionally until slightly thickened and bubbly, about 10 minutes .
