  • 2 tablespoons butter

  • 8 oz sliced fresh mushrooms

  • 1/4 cup finely chopped onions

  • 2 tablespoons flour

  • 2 cups vegetable broth

  • 1 cup heavy cream

  • 1/2 teaspoon salt

  • 1/4 teaspoon nutmeg

  • 1/8 teaspoon pepper

Directions

  • Melt butter in a large pot. Sauté mushrooms and onions in butter until soft but not browned, about 5 minutes.
  • Add flour and stir to make a roux that clings to the vegetables.
  • Add broth slowly, about 1/2 cup at a time, whisking to incorporate flour after each addition.
