Small pieces of pork are seasoned with barbeque rub and wrapped in bacon. After being coated in barbeque sauce, they’re grilled until sizzling and juicy.
More barbecue sauce gives these little succulent mouthfuls a tangy taste that reminds you how good it is to grill, no matter what time of year.

What Are Pork Medallions?
Pork medallions are coin shaped pieces of pork tenderloin. The tenderloin is a long, thin, lean cut of meat taken from the backbone of the pig. This is a boneless, tender cut of meat that benefits from quick cooking methods, such as grilling, broiling, or pan frying. It has a mild flavor that takes well to sauces, rubs, and marinades.
Pork medallions are typically cut from the tenderloin in its raw state. This makes the resulting circular pieces a wonderful size for not only cooking, but for serving. They can be rolled in a seasoning blend easily and look beautiful when arranged on a plate.
Do I Have to Use the Grill?
No!
Grilling is my favorite way to cook these juicy medallions, but they can also be baked in the oven. Keep in mind that this way will create a greasier version of the dish due to the cooking method.
To bake, preheat oven to 400 F. Sear each prepared medallion, top and bottom, in a hot skillet to seal in juiciness. Place in a baking dish and bake for about 20 minutes. If you prefer crispier bacon, you can partially cook the bacon before wrapping it around the medallion.

What BBQ Spice Rub Is the Best to Use?
I like to use a sweet barbeque rub on the meat before wrapping it in bacon. My favorite is Kansas City Barbeque Rub by The Spice House. Like all seasonings at The Spice House, only the highest quality spices are used, which translate into amazing, deep flavor. The Kansas City BBQ rub is a mixture of salt, paprika, cane sugar, allspice, nutmeg, pepper, garlic, and cinnamon. I think it’s the perfect taste for pork, especially when that pork is wrapped in bacon!
You can even use The Spice House Kansas City Barbeque Rub to make a quick and easy barbeque sauce! Just combine 2 tablespoons of the rub with 1 cup of ketchup and you’ve got a delicious barbeque sauce for your pork medallions.

- Wrap each medallion with a half slice of bacon, securing with a toothpick or cooking twine.
- Place bacon wrapped medallions in a large dish or Ziplock bag. Pour about 1/2 cup barbeque sauce over meat. Cover and refrigerate at least 30 minutes, up to 24 hours.
- Grill over medium low heat for about 15 minutes, turning once.
- Brush with barbecue sauce and grill and additional 1 – 2 minutes to caramelize sauce.
