When the dessert worlds of creamy, refreshing ice cream and easy-to-slice and serve homemade pies collide, you get Ice Cream Pie!
Our ice cream pie begins with a simple crust. I like to use store-bought crusts for convenience, but you can also make a crust from crushed graham crackers or cookies, butter, and sugar. (If you make your own, bake it before filling.)
Then it’s just a matter of softening ice cream, mixing it up with some yummy mix-ins, and topping it with a rich sauce. Freeze until ready to serve, and maybe add some garnish or whipped cream on top. And that’s it!
It’s easy to make, a little fancier than dishes of ice cream, and it’s sure to put a smile on everyone’s face to enjoy their favorite ice cream in pie form!
What Other Flavor Combinations Can I Make?
One of the things I love about this recipe is the versatility of it. If you’re not into cookies and cream, it’s super easy to create other ice cream pie variations! Just remember to use a graham cracker or cookie crumb crust rather than a traditional, baked flour pie crust.

Why Aren’t Measurements Used in This Recipe?
This recipe is one that doesn’t need measurements. Don’t let that send you into a panic! It’s good to set the measuring cups aside and cook by estimation, the way generations before us did. And if you’re not comfortable with that, this recipe is a great place to gain confidence in your abilities!
You can use as much ice cream as you want, and as many sandwich cookies as you want. You can pour a thick layer of hot fudge onto the pie, a thin layer, or none at all. Garnishing? It’s up to you.

- Set the ice cream out to soften. Crumble about 10 sandwich cookies into a small dish.
- Scoop ice cream onto a plate. Use two forks to further soften ice cream.
- Fold crumbled sandwich cookies into softened ice cream.
- Pour the mixture into chocolate crust. Repeat process if needed to fill crust.
- Smooth top of ice cream. Cover and freeze 2 hours.
- Heat jar of hot fudge sauce in microwave for 30 seconds. Stir, then pour sauce over top of frozen pie. Spread sauce so it covers entire top of pie. Cover and freeze 2 more hours.
- Garnish with sandwich cookie crumbles and whipped cream. Leftover pie can be stored, covered, in freezer for up to a week.
