What Is Quiche?

Quiche is a savory pie made from eggs, milk or cream, and typically cheese, vegetables, or meats. It is a popular dish at brunches and spring holidays, such as Mother’s Day and Easter. Quiche can be served warm or cold, making it very versatile.

Quiche is a dish that is associated with France, however its origins are German. The word quiche comes from the German word for cake, kuchen. The earliest quiches, from 1400-1500, were egg custard pies baked in brioche. While the French are attributed to developing Quiche Lorraine, food historians aren’t sure if it was the German or the French who began using pastry crust in lieu of brioche. But whomever did was responsible for the light, flavorful dish we’ve come to know and love today.

Quiche can be served warm or cold.

Can I Use Egg Substitute in Quiche?

Yes!

Using an egg substitute is easy! One whole egg is equivalent to 1/4 cup of egg substitute. This recipe uses 4 eggs, so use 1 cup of Egg Beaters or other brand.

For a vegan option, I recommend JUST Egg plant-based scramble. The equivalency is slightly different for this product. One whole egg equals 3 tablespoons of JUST Egg, so for this recipe you’d need 3/4 cup.

Ham and Cheese Quiche can be made with leftover ham or a ham steak.

Can I Substitute Other Meats or Veggies?

Yes!

You can make all kinds of quiche varieties by changing the add-ins. In this recipe, I used one cup of meat and one cup of cheese in the egg mixture, but you can definitely made substitutions. Your add-ins should total about 2 cups. Give some of these a try:

  • Mushrooms
  • Spinach
  • Diced red or green pepper
  • Diced onion
  • Asparagus
  • Black beans
  • Tomatoes
  • Herbs
  • Cooked, crumbled bacon
  • Sausage
  • Tofu
  • Taco meat
  • Shredded chicken
  • Steak strips
  • Other cheese varieties, including Swiss, American, feta, mozzarella, or pepper jack

Directions

  • Bake pie crust in a 375 F preheated oven for 10 minutes. Allow to cool slightly, 5 to 10 minutes.Bake the pie crust for 10 minutes.
  • Lay diced ham and 1 cup shredded cheese in crust.Lay diced ham and 1 cup of cheese in baked crust.
  • In a medium bowl, whisk together eggs and half and half. Pour over ham and cheese.Whisk together eggs and half and half, then pour over ham and cheese.
  • Sprinkle remaining 1/2 cup cheese over egg mixture.Sprinkle remaining cheese on top.
  • Bake 30 minutes or until a knife inserted into the center comes out clean.

  • 1 cup diced ham OR 1 ham steak, diced

  • 1 1/2 cups shredded cheddar cheese, divided

  • 4 eggs

  • 1 cup half and half

Directions

  • Bake pie crust in a 375 F preheated oven for 10 minutes. Allow to cool slightly, 5 to 10 minutes.
  • Lay diced ham and 1 cup shredded cheese in crust.
  • In a medium bowl, whisk together eggs and half and half. Pour over ham and cheese.
