What Are Roasted Cinnamon Pecans?
These roasted cinnamon pecans are a sweet, delicious candied nut snack. The crisp, sugary shell around each nut is the result of slow roasting the nuts at a low temperature. This causes the sugars to caramelize, encasing each nut and locking in flavor.
In one theory, the art of slow roasting nuts with a cinnamon sugar coating dates back to the middle ages. In the Bavarian region of Germany, vendors roasted almonds in a cinnamon-sugar mixture. Packets of warm nuts were sold to the public during Munich’s Oktoberfest. As time went on, roasted nuts became commonplace at Christmas marketplaces throughout Germany, as they still are today. But nut-lovers needn’t wait all year for this delectable treat. They can now be found at fairs and festivals all year ’round!
How Long Will These Nuts Stay Fresh?
The good news is that these nuts will keep without refrigeration for about ten days. The bad news is, if you leave them out, they’ll be all gone in less than a day!
To keep them a bit longer, store them in a sealed container in the refrigerator. They’ll stay fresh this way for up to ten days. It might deter your family from snacking on them for a little while. But if you’re intending to give a jar of nuts as a gift, you should hide them as far back in the fridge as you can!
How Should I Use My Roasted Cinnamon Pecans
- Place a dish of roasted cinnamon pecans on a charcuterie board.
- Use them as a sweet topping on a salad.
- Mix them into trail mix or baked Chex mix.
- Chop and use to top pancakes or waffles.
- Package in 4 or 8 ounce Mason jars to give as gifts.
- Eat as a snack!
Directions
- Preheat oven to 275 F.
Combine granulated sugar, brown sugar, cinnamon, salt, and nutmeg in a small bowl. Set aside. - In another bowl, whisk together the egg white and water until frothy.
- Pour egg white mixture over pecans. Stir to coat.
- Fold sugar mixture into pecans until nuts are coated.
- Spread mixture on a greased baking sheet. Roast in preheated oven for 45 minutes, stirring every 15 minutes. Sprinkle with additional 1 tablespoon granulated sugar. Cool completely.

1/2 cup granulated sugar + 1 tablespoon (divided)
1/4 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 egg white
1 tablespoon water
3 cups pecan halves

- Preheat oven to 275 F.

I love sugar coated nuts but I’m trying to stay away from sugar. Have you ever tried doing this with a sugar substitute? I like to use monk fruit.
I haven’t tried that yet and have veered from keto for the holidays, but I should try it and see what happens. I use Truvia, which is super, super sweet, so maybe I’ll get some monk fruit to play with. Thanks for the idea!
