Baking powder biscuits are a quick bread that is created from a soft dough and leavened with baking powder. They are very easy to make and can be eaten as an accompaniment to any meal. Their mild flavor allows them to be paired with a wide variety of foods, and they can be seasoned specifically to enhance any main dish.
Biscuits are closely related to scones. The main difference between these two types of quick bread is that scones contain eggs, but biscuits do not. Other ingredients can vary, depending upon the specific recipe, but both do include flour, salt, baking soda, and milk or buttermilk.
Extra ingredients can be used in these biscuits for additional flavor, such as seasoning blends, shredded cheese, or fresh herbs. Stir in the extra ingredients when you add the milk to the flour and butter mixture.

When we make these biscuits, we usually enjoy them for breakfast in the morning. If you use a larger biscuit cutter, you can make sandwiches with fried egg, bacon or sausage, and cheese. Small biscuits are delicious with homemade jam, apple butter, or butter and honey. Of course, you can use these biscuits to make traditional biscuits and gravy to start your day the Southern way!
But these biscuits are delicious at other times of day, too. I like to use them for chicken salad sandwiches at lunchtime, and they are just as tasty with peanut butter and jelly. In the evening, baking powder biscuits are wonderful as a dinnertime bread with roast chicken, pot roast, or pork tenderloin. For a special treat, brush the tops of the biscuits with melted butter and sprinkle with garlic salt about 2 minutes before removing them from the oven. These buttery garlic biscuits are perfect with spaghetti and meatballs or our Italian sausage stuffed shells!

Don’t overmix. When you’re mixing the milk into the dry ingredients, don’t stir too much. Mix until it forms a soft dough, then knead it only gently. Overmixing causes more gluten strands to form, which results in a tougher final product. Baking powder biscuits should be fluffy, not stringy.
Knead with as little flour as possible. Extra flour is needed to prevent the biscuit dough from sticking to the kneading surface and your hands, but don’t go overboard. If the biscuits take up too much extra flour, they’ll gain dry, crumbly spots. You’ll want to use just enough to prevent stickiness.
Don’t increase the amount of baking soda. You might think more baking soda will result in a fluffier biscuit, but the opposite is true. Adding more baking soda causes larger carbon dioxide bubbles to be released, which rise to the top of the dough and pop. As a result, the bread will fall.
Brush with melted butter. For a true golden brown biscuit, brush the tops of the biscuits with melted butter a few minutes before taking them out of the oven. This little extra touch results in one beautiful, Instagram-worthy batch of biscuits!
