What Are Make Ahead Freezer Breakfast Burritos?

The first time I had breakfast burritos, I was hooked!

I love a hearty breakfast, and I love burritos. Merging them together, to me, was nothing short of genius! Biting into scrambled eggs, breakfast meats, and melted cheese rolled into a soft tortilla bundle quickly became a vital part of my morning routine.

When I started my keto diet, I realized that my breakfast burrito addiction had to end. The frozen breakfast burritos that I was accustomed to buying were not part of my new eating plan. And while I was okay with that, I confess that I kept checking the freezer section of my grocery store, hoping that some brand somewhere would offer a keto-friendly, ready-made breakfast burrito.

When I discovered keto-friendly tortillas at my Aldi, I realized that I could make a batch of breakfast burritos ahead of time, then freeze them. Using my old favorite frozen breakfast burritos as a model, I was able to do just that!

This recipe is fantastic because it can be easily adapted to different dietary needs and preferences. Feel free to experiment to create filling that is perfect for you and your family!

Each burrito is filled with onion, bell pepper, egg, sausage, and cheese.

How Do You Fold a Burrito?

Once you understand the technique, learning how to fold a burrito is easy as can be!

  1. First, place the bulk of the filling about 2/3 of the way down the tortilla. This will allow you to create a roll that traps that yummy filling inside.

2. Next, fold the sides of the tortilla inward. No one likes to lose their filling as they bite into it!

Fold the edges inward.

3. Now it’s time for the tricky part, but it makes all the difference. Bring the bottom of the tortilla up and over the filling. The tortilla will look a bit like an envelope. Lay your hand over the bottom portion and use your fingers to tuck the edge into the pocket, behind the filling.

Fold in the sides, then fold the bottom over and behind the egg mixture, then roll to the top.

4. Finally, once that bottom edge is tucked, you just need to roll the burrito up! That’s all there is to it!

Roll the remainder of the burrito up to finish it off.

How Can These Be Adapted for Other Diets?

The great thing about this recipe is that it can be adapted for a variety of dietary needs!

Keto: These breakfast burritos can be a great meal for those following a keto lifestyle. Just substitute keto-friendly tortillas for the flour version. I found keto tortillas at my local Aldi for a great price!

Gluten Free: As with making the keto version of this recipe, you can substitute gluten free tortillas for flour to enjoy a delicious breakfast burrito in the morning!

Vegetarian: To make a yummy vegetarian breakfast burrito, simply omit the sausage. You can also substitute vegetarian sausage crumbles, like these Italian “sausage” crumbles by Morningstar Farms.

Vegan: It’s easy to substitute vegan-friendly ingredients for the tortillas, eggs, cheese, and butter used in this recipe. However, not all vegan egg substitutes can be frozen after cooking. One that can be used is VeganEgg by Follow Your Heart products. Be sure to check your favorite vegan egg substitute to determine if it can be cooked and frozen before making this recipe.

  • Cook sausage in skillet until no longer pink. Drain on a paper towel and pat to remove as much grease as possible. Set aside.Cook the sausage until its no longer pink.
  • Whisk eggs in a large bowl. Add salt and pepper to taste. Set aside.Whisk the eggs and set aside.
  • Melt the butter in a large skillet. Cook the onion and green pepper over medium heat until crisp-tender, about 1 to 2 minutes. Cook onions and peppers in butter until crisp-tender.
  • Add whisked eggs to skillet. Scramble eggs with pepper and onion by sweeping a spatula along the bottom of the pan, scooping and shifting the eggs. Continue the process until the eggs are cooked. Add eggs to skillet and scramble until done.
  • Lay out a square of plastic wrap on top of a square of foil. Place a tortilla on the plastic wrap. Add about 1/4 cup of sausage, 1/4 cup egg, and 1/8 cup of shredded cheese in a line about 1/3 of the way up from the bottom of the tortilla.Lay egg mixture, sausage, and cheese on tortilla.
  • Fold the burrito. First fold in the edges. Holding those down, wrap the bottom edge of the tortilla up over and behind the egg mixture. Roll the burrito upward to close it.Fold in the sides, then fold the bottom over and behind the egg mixture, then roll to the top.
  • Wrap the burrito in plastic wrap. Place it on one edge of the plastic wrap and roll so the wrap forms a cylinder around the burrito. Fold the ends over onto the burrito.Roll the burrito in plastic wrap.
  • Using the same method, roll the plastic wrapped burrito in foil.Wrap the burrito in foil using the same method.
  • Label the burrito, including the date, with a permanent marker. Freeze until ready to use.Label the burrito with the date.
  • When you’re ready to heat a burrito, remove the foil and open the two ends of the plastic wrap for ventilation. Microwave the burrito in the plastic wrap on the defrost setting for 1 minute. Turn over and microwave on defrost for another 20 seconds.Unroll both ends of plastic wrap.
  • Remove from plastic wrap. Serve with salsa, sour cream, avocado, or green onion slices.Serve with salsa, sour cream, avocado, and other toppings.
