What Are Vidalia Onions?
Vidalia onions are a variety of sweet onions that meet certain shape, variety, growing location, and identification requirements before being granted the title of Vidalia. Because of these requirements, the Vidalia onion brand is protected, ensuring that onions bearing the Vidalia name are the highest quality and represent all the flavors that they are known for.
Visually, Vidalia onions are flattish. If you were to take a regular yellow onion, place it on a table and squish it with a book, the resulting shape would be that of a Vidalia onion. They have a sweet, almost buttery flavor that emerges when cooked.
Much like champagne can only be called champagne if it is made in the Champagne region of northern France, Vidalia onions can only be called such if they are grown in one of 20 approved counties in southern Georgia. Legislature was created in 1989 to stipulate in exactly what areas these onions can be grown, as growing conditions, soil, and the like has an effect on overall taste, quality, and size of product.
I love sauteeing Vidalias to use as condiments on steak, burgers, grilled chicken, and anything else I can get my hands on. They work especially well in combination with cheeses, like in this hot dip, or in omelets and quiches.
How Should I Serve Vidalia Onion Dip?
Our favorite way to serve this hearty dip is with bagel chips or pita chips. Since it accumulates some oil after baking, bread cubes work very well with this dip, too. I’ve also had Vidalia onion dip with tortilla chips, but I don’t like it as much because the tortilla flavors don’t allow the sweet Vidalia notes to come through.
I also like to use this dip in other ways. Try it on a freshly-grilled hamburger, over chicken or baked ham, or as a condiment on an ordinary turkey sandwich. Hot Vidalia onion dip has a way of taking ordinary foods to the next level!
Can This Dip Be Made Ahead of Time?
Yes! If you’ve got a lot to do, you can definitely lighten you load by making this dip ahead of time. Assemble the dish, but stop before baking. Cover the dish tightly and store it in the refrigerator until you need it. You can store it like this for up to two days before using it.
When you’re ready to bake, let it sit at room temperature for about 15 minutes to allow the baking dish to warm a bit. Then just bake at 400F as your normally would, but keep in mind that it may take a little longer for the dip to warm up since it’s starting out at a colder temperature.

- Preheat oven to 400F.
Chop half of the Vidalia onion into small pieces. - If you have a block of Swiss cheese, shred using the largest holes on your grater.
- Combine chopped onion, shredded Swiss cheese, and mayonnaise in a large bowl. Mix well.
- Pour mixture into a 3 cup baking dish. Top with additional 1/4 cup shredded cheese, if desired.
- Bake in preheated 400F oven for 30 minutes, or until hot, bubbly, and golden.
- Top with sliced green onion just before serving, if desired. Serve with pita chips, bagel chips, or cubed bread.
