I never used to pay much attention to breakfast, in spite of knowing it’s the most important meal of the day. I used to grab a cup of coffee on my way out the door. And on weekends I would often skip breakfast completely.
But when I started my ketogenic lifestyle, I realized that I needed to develop healthier eating habits. That included eating breakfast.
Sigh.
I really didn’t want to complicate my morning routine with cooking, so when I discovered these little ham and egg cups, I was thrilled. They are so easy, so quick, and soooooo good!
You’ll need a slice of deli ham and an egg for each little egg cup. I like to include fresh spinach and cheese in mine, but you can omit these or substitute another veg for the spinach. I make two for myself in the morning, but making a dozen wouldn’t take much longer at all!
You’ll also need a muffin pan to form the cups. As an alternative, you could use custard cups and set them on a cookie sheet for baking. I’m the clumsy sort who would accidentally let the custard cups slide off the sheet and into the oven, so I definitely prefer my solid, one piece muffin pan instead.
Directions
- Preheat oven to 400 degrees.
Grease a muffin pan with cooking spray, then press one slice of ham into each cup. Depending on the size of your ham slices, you might need to fold the slices in half or even use half a slice instead of a full one. - Lay a few fresh spinach leaves in each ham cup.
- Then crack an egg into each cup.
- Top each with a generous pinch of shredded cheese.
- Bake in preheated oven. Ten minutes yields a soft yolk. If you prefer a hard yolk, bake for twelve minutes.
Ovens do vary and eggs are finicky little guys, so I recommend checking their consistencies beginning at about eight minutes. Remember, too, that they will continue cooking briefly after removed from the oven.

Directions

- Crack an egg into each cup.
- Top each with a generous pinch of shredded cheese.
- Bake in preheated oven ten minutes for a soft yolk, twelve minutes for a solid yolk.
- Serve hot. Season with salt and pepper to taste.
