When the tantalizing scent of baked acorn squash with apples wafts through the kitchen, my kids get really impatient for dinner. They’re excited about vegetables pretty much … well, never. So when I found out that they loved this, I put it on my fall menu rotation faster than you can say SQUASH ME!

Acorn squash is one of the more popular winter squashes that is popular in autumn cooking. Its natural sweetness pairs well with flavors like apple, maple, or brown sugar. And in this dish, the textures of the squash and apples blend together beautifully.

Enjoy this side dish as part of a holiday meal.

Directions

  • Preheat the oven to 425 F.

    Cut the squash in half and spoon out the seeds.
  • Place the halves upside down in a 9×13 inch pan. Add enough water so the edges of the squash are covered by about an inch.
  • Microwave the squash for about 10 minutes, or until the skin is pierced easily with a fork.
  • Drain the water and turn the squash halves right-side up. Spoon apple pie filling into the cavities. If you have any leftovers, you can place them in a small oven-safe casserole dish to bake on the side.
  • Sprinkle with brown sugar, about 1 tablespoon on each half.
  • Bake in preheated oven for about 15 minutes, or until apples are warmed through.

  • 2 tablespoons brown sugar

  • Cinnamon sugar
